How do I beg them nicely to not overcook the fish?

It’s precooked, so if you’re in the main dining area, DON’T. You’ll appear ridiculous.

You don’t. Large batches of food are cooked, then it is kept warm beneath lamps until it is ordered.

Eating in specialty restaurants, where food is prepared to order, is the only way to have more personal satisfaction.

No, they are not set up to cook fish to order in the main dining room. You can request customized cooking from room service.

More specifically, you should cook your fish to 145 degrees. But there’s no way to ask that without coming out as extremely demanding.
